Fried Chicken - The Best Fried Chicken Recipe

Back in 2013, I set out to reverse engineer the recipe for Gus's Fried Chicken (Memphis, Tennessee). I came close on several occasions and re-dedicated myself to cracking the code this year. A recent visit to Memphis allowed me to give the chicken one more taste, being able to pull data from my experiments and reach a final conclusion.

Here follows the recipe. It is based on just one boneless, skinless chicken breast weighing in at 1 pound, and cut into three pieces. It can be adjusted for larger quantities of chicken.

Here is the link to The Fried Chicken Blog (More Information and Comments)

Gus’s Fried Chicken
#1 November 17, 2017
24 hour marinade. Begin the day before you plan to fry the chicken
(Increase these quantities, depending on how much chicken you plan to make)
1 lb (one) boneless skinless chicken breast cut into three pieces
1 cup corn starch
¼ cup (4 tablespoons) all purpose flour
1 tablespoon ground black pepper
1 tablespoon sweet paprika
1 tablespoon cayenne pepper
1 teaspoon Kosher salt
1 cup water (note: 1 ½ cups is too much. I actually ended up with 1 ¼ cup water and poured off a little water in the morning that had gathered on top of the marinade)

Marinade for 24 hours.

Fry at 325-350 F. Use a neutral vegetable or corn oil. I do not recommend canola oil as it smells like frying fish and adds an unpleasant fish taste to fried foods.

Note, when the exterior crust looks perfect, the interior may still be uncooked. It is the curse of these huge chickens that they sell now. Try your best to buy a 2.5-3 lb chicken.

If it isn't spicy enough, "salt" with Tony Chachere creole seasoning. Next time you make it, increase the amount of cayenne, and/or, add chopped whole serrano chiles or habanero chiles to the marinade.

Now, it is possible that you don't want to fry chicken at home and you are asking, "Where does Jay go in Houston for fried chicken?"
If people are visiting from out of town, I will take them to Barbecue Inn on Crosstimbers at Yale, as it is historically significant and a Houston institution. We don't get barbecue here. We get fried chicken.

Frenchies is another historically significant Houston destination for fried chicken. For my taste, it is too salty. But I am in the minority. Frenchies on Scott Street near TSU should definitely be on your list to try.

Fried Chicken - The Best Fried Chicken 2021 - Where to Find the Best Fried Chicken in Texas ?

UPDATE 2021: The previous year of 2020 saw the closure of these events. In 2021, most have still not come back. With the exception of a few as the year progresses.

Every year, I create a calendar for the Sunday church picnics in the German-Czech part of central Texas. These churches have been using fried chicken picnics as fund raisers for over 100 years and this is one of my favorite things about living in Texas. Most are no more than 2 hours by car, west on I-10, and make for a perfect Sunday outing. Bingo, polka music, great food and a little bit of the countryside. What more could you want? Favorites include: Moravia, Schulenburg, Shiner, Praha, and St. John's. But heck, I also love Ammansville, Ellinger, Cistern. Yeah, I guess I love them all!

Be sure to visit my other blog, The Fried Chicken Blog for more information on all things fried chicken.

Food typically begins serving at 11:00 a.m. You can expect fried chicken, sausage, green beans, German potatoes, iced tea, bread, homemade desserts and often, picnic stew or barbecue as well.

Korean Fried Chicken - Houston

Because crunch! We love the Korean style of fried chicken because of the crunch, based on a batter with corn starch, rice flour, maybe a little wheat flour, but mostly starches that don’t develop gluten and make for a less breads crust, and one that holds it crunch better over time. Korean fried chicken is twice fried. A lot of moisture gets released as the chicken rests after its initial fry time and the second frying brings the crunch back. The chicken is then tossed with a sauce, ranging from mild to hot, and also from very syrupy sweet to not as sweet. On the sweet side, the sauce may be thick and gloppy. Over time you’ll be sure to figure out which sauce option suits your palate the best.

Houston has some terrific places for Korean Fried Chicken.

My current favorite is at 1519 S Mason Road in Katy. It's the BBQ Chicken location of a company started in 1995 with locations in 57 countries. Because I have some issues now with really spicy food, I opted for the original recipe and the honey and garlic recipe, both of which I enjoyed thoroughly. By the way, the new Souk International Market in the same strip center is fantastic for all your international shopping needs. Currently #1 in my ratings.

Here is a little place I discovered at 10020 Long Point, which I love. It is called Hotsome Chicken. My first visit, I ordered with a mild "Fine Orange" sauce. It was a little gloppy and syrupy and I'll probably up my game the next time to "Lemon Pepper". The chicken crunch was spot on. Currently #2 in my ratings.

The next place I mention, also on Long Point (at Blalock) is Krisp Korean Fried Chicken. Currently #3 in my ratings.

Soho Korean Fried Chicken Houston - A Michael Shum Discovery

My friend, Michael Shum, writes about a Korean restaurant (Korean fried chicken and other Korean entrees) discovery. Just have a look at this delicious food from a recent lunch visit with him:

Michael says: "Had another delightful lunch at Soho Chicken Houston (www.sohochicken.com). Every item in the Katsu Bento is excellent. I’m impressed by the freshnes of all of the ingredients (no refrigerator taste at all) and great execution. The chef came out to give us 3 Bonchon that are so good I hope that they will expand the menu and offer more Korean food menu items in the near future.
The place is run by really nice people whom it gives me great pleasure to support. So far 3 for 3, and I’ll continue to visit them."
